Aunt Ronnie's Mardi Gras Day Jambalaya
One stick Butter
One Onion
½ cup Parsley
One bunch Green Onion
One whole Garlic
½ cup Celery
One can 15 oz Rotel Tomatoes
One Can 15 oz Tomato sauce
Two cups Rice
1 lb meat (sausage, shrimp, chicken, etc.)
How I make my sausage Jambalaya:
I sauté 1 lb sausage in Louisiana hot sauce and Tony's; I have no measurements other than I am sure my sausage is covered. I cook till I have dripping and sausage has absorbed the Tony's and Louisiana Hot sauce.
Boil two cups rice and set aside. Sauté Onion, garlic, green onion, and celery in butter 5 for 5 minutes. Add Rotel Tomatoes, parsley and Tomato sauce and cook for 20 minutes. Add meat and cook for 15 minutes. Then add rice stir and serve.
Nana's Tomato Gravey
1 lb ground meat
1 head garlic
1 onion - chop
1 bell pepper - chop
1 bunch green onion
2 table spoon parsley
1 can tomato paste
1 can tomato sauce
1 can crushed tomatos
Salt and Pepper to taste
two tablespoons olive oil
8oz water
Cook olive oil and ground meat on medium heat. Salt and pepper to taste. Cook till ground meat is all brown then add garlic and oinions. Cook till onions become see through. Add tomato paste and cook for about a min, then add tomato sauce and crushed tomatos. Add 8 oz of water, with bell pepper, green onion, and parsley. Cook for about an hour
Fresh Cobbler
8 fresh firm ripe peaches
1 cup sugar to taste (I do not add sugar with other fruits or berries)
1/2 cup butter
Batter
1 Cup flour
1 cup sugar (I use half cup)
1 teaspoon vanilla or almond flavor
2 teaspoon baking power
3/4 cup milk
1 egg
Wash peaches (do not skin), dry and cup up in wedges, melt butter in 9" square pan in oven. Mix sugar with peaches. Combine dry ingredients and mix in milk and egg into thick batter. Pour batter over melted butter. Layer on the peaches, spooning on any juices/sugar. Bake 350ºF oven about 45 minutes or top is golden crust. Cool to warm.
Pecan or Walnut Pie
(We had the pecan pie at a Thanksgiving dinner at a friends house.. I could not eat enough of this.)
1 cup white corn syrup
1 cup dark brown sugar
1/3 teaspoon salt
1/3 cup melted butter
1 teaspoon vanilla
3 whole eggs
1 heaping cup shelled pecans (walnuts)
Mix syrup, sugar, salt, butter, vanilla. Add slightly beaten eggs. Pour into a 9" unbaked pie shell. Sprinkle pecans over filling. Bake in 350ºF oven for approximately 45 minutes.
Lazy Daisy Cake
(I found this crinkled up paper recipe - haven't tried it yet, but I did not want to lose it)
Beat 2 eggs until thick. Add gradually 1 cup sugar, beating constantly. Add 1 teaspoon vanilla. Shift together 1 cup flour, 1 teaspoon baking powder and 1/4 teaspoon salt. Add to first mixture. Heat to the boiling point 1/2 cup milk and 1 tablespoon butter. Add to mixture. This may be a little thin, but do not add flour. Bake in a rather deep pan. Allow at least two inches above the line of batter since this rises more than the average cake. Ice While hot in the pan. Cut in squares or wedges when ready to searve.
Icing
For icing use 3 tablespoons butter, 5 tablespoons brown sugar, 2 table spoons cream, and 1 cup cocoanut. Boil for three minutes and no longer. Spread on cake and place under the broiler until cocoanut becaomes slightly browned. Watch this closely so it won't get too brown.
Mushrooms
(This recipe is from a good friend I use this with pork chops, hamburger patties, or steak.)
1 tsp. garlic powder
1 t onion bits
1/4 tsp. pepper
1 stick margarine
1/4 tsp salt
1 t worchestershire sauce
1/4 tsp salt
1/4 cup red wine (the cheapest you can find is the best)
1 t soy sauce
Wash mushrooms in cold water. Cut into quaters. Put all ingredients execpt mushrooms in sauce pan and heat until butter is melted. Add mushrooms and simmer UNCOVERED approximately 30 minutes.
Sweet Potato Casserole
(This is Nana's Thanksgiving speciality)
3 cups cooked mashed sweet patatoes
2 eggs, beaten
1/3 cup milk
1 cup sugar
1/2 cup oleo (lard), melted
1 tsp vanilla
Mix ingredients and place in large buttered shallow baking dish. Sprinkle with topping. Bake at 350ºF for 25 minutes.
TOPPING
1 cup light brown sugar
1/3 cup Oleo (lard), softened
1/2 cup flour
1 cup chopped nuts
Mix oleo with flour and sugar, using pastry blender or fingers. Add nuts , mix and top casserole.
Crawfish etouffee
This is quick and yummy
1/2 cup butter
1 lb crawfish
1/2 bell pepper
2 cloves garlic
1 onion
2 celery stick
1 can cream of mushroom soup
Season Salt
Saute tails in butter for 5 minutes. Remove tails and keep butter in pan and add vegtable mix and cook for 10 minutes. Season tails with season salt. Add season tails and soup to mixture. (I usually add 8 oz water) Cook 20 minutes.
Serve with rice.
Baked Zeti
1 pack zeti noodles
1 lb lean ground meat
1/8 tsp parsley
1 can stewed tomatoes
1 medium onion
salt and pepper
1 tsp oregeno
1 tsp basil
1 head garlic
1/4 cup par cheese
1 pack mozzarella
Cook zeti to package directions and set aside. Brown ground meat and drain. Saute onion, garlic till tender. Add Chop stewed tomatoes and add to onion, meat and garlic. Then add Oregeno, basil, parsley. Stimmer 15 minutes. Preheat oven 375ºF. In a large mixing bowl, mix in zeti, cheeses, sauce mixture. then turn into a 13"x9" baking dish. Bake about 20 minutes.
Pralines
3 cups brown sugar
1/2cup water
1 can condensed milk
2 cups pecans
Bring water and sugar to Soft ball on chandy therometer. Remove from heat add condensed milk and cook again to soft ball. remove from heat and stir and stir add pecans and stir and stirr to thicking and opaque glossy. (the last stage is a learning process.)
Marinated Cheese
1/2 cup olive oil
1/2 cup white wine vinegar
3 tbl chooped fresh parsley
3 tbl minced green onions
1 tsp sugar
3/4 tsp dried basil
1/2 tsp salt
1/2 tsp pepper
3 cloves garlic, minced
1 (2-oz) jar pimiento, drained
1(8oz) block sharp cheddar cheese, chilled
1(8oz) packaged cream cheese, chilled
Combine first 10 ingredients in a jar; cover tightly, and shake vigorously. Set Marinale aside.
Cut block cheese in half lengthwise. Cuth crosswise into 1/4" thick slices; set aside. Repeat procedure with cream cheese. Stand cheese slices on edge in a shallow dish, alternating types od cheese. Pour marinade over cheese. Cover and marinade in refrigerator at least 8 hour.
Transfer rows of marinated cheese to a serving platter in the same alternating fashion, reserving marinade. Spoon marinade over cheese slices.
